Vanillin

A clear, sweet vanilla smell recalling vanilla sugar, pale icing and warm pastry. Vanillin is one molecule within vanilla’s much broader aroma; it does not reproduce every woody, spicy or fermented facet of the pod. It softens dry woods and resins and gives flowers a rounded sweetness, without meaning that vanilla extract was used.
